This is not a standard sightseeing trip. This is a fully immersive, hands-on experience where you will walk through a working cocoa plantation, get your hands into real cocoa beans, craft your very own chocolate bar to take home, and then step inside a working rum distillery to understand how St Lucia’s beloved spirit is made before tasting several expressions straight from the source.

Sample Itinerary – Your Day with Us

8:30 AM – Hotel Pickup

Your driver will collect you from your hotel, resort, or a central meeting point. The journey to our first stop passes through the scenic St Lucian countryside keep your eyes open for the lush green hills and banana plantations lining the road.

9:30 AM – The Cocoa Plantation

Your first stop is a working cocoa plantation in the heart of St Lucia’s cocoa-producing belt. As you walk the plantation with your guide, you will see the full lifecycle of the cocoa tree — from flower to pod. St Lucia has been producing fine flavour cocoa since the colonial era, and the island’s cocoa is considered among the finest in the Caribbean.

Your guide will walk you through the entire process: how pods are harvested from the trees, how beans are extracted and fermented in wooden boxes for 5 to 7 days, how they are then sun-dried on large wooden trays, and finally how they are roasted and processed. You will smell the cocoa at every stage from the raw, fruity scent of fresh beans to the warm, deep aroma of roasted nibs.

11:00 AM – Make Your Own Chocolate Bar

This is the activity guests love most. Under the guidance of our chocolate maker, you will get hands-on and create your own chocolate bar from scratch. You will mix, temper, and mould your chocolate, then customise it with toppings of your choice from sea salt and dried fruit to local spices and coconut. Your finished chocolate bar is wrapped and packaged for you to take home as a unique St Lucian souvenir.

This activity is enjoyed by adults and children alike, and it makes for excellent photos and memories.

12:30 PM – Lunch Break (Optional)

Depending on your tour package, we can arrange a stop for a local St Lucian lunch at a nearby restaurant. Traditional dishes such as green fig and saltfish, stewed chicken, fried plantain, and fresh seafood are available. Please mention this when booking if you would like this included.

1:30 PM – The Rum Distillery

St Lucia has a deep and proud rum-making heritage, and our distillery visit brings that story to life. At the distillery, you will be guided through the entire rum production process:

  1. The harvest and crushing of sugar cane to produce fresh cane juice
  2. The fermentation process, where natural yeasts convert sugars into alcohol over several days
  3. Distillation in copper pot stills and column stills you will see the actual equipment in operation
  4. Maturation in oak barrels, where rum develops its colour, complexity, and character
  5. Blending how the master blender creates consistent house expressions across different batches

After the tour, you will sit down for a guided rum tasting. You will sample a selection of rums ranging from light and fresh unaged white rum, through medium-bodied aged expressions, to rich and complex premium dark rums. Your guide will walk you through the tasting notes — colour, nose, palate, and finish, and explain what makes each rum distinctive.

3:30 PM – Return Journey

We return you to your hotel or drop-off point. You will leave with your handmade chocolate bar, a full stomach, new knowledge about two of St Lucia’s most beloved industries, and almost certainly a new favourite rum.
